I’m always on the look-out for quick, easy and healthy meals that will fill me up without a lot of effort. When I came up with this idea of making a good-for-you pasta salad, adding superfood Spinach was a no brainer.
This pasta salad is great for meal prep as you can add the dressing in later (keep it in a smaller container to keep everything from getting soggy). On the weekend before a long week ahead, boil a big pot of pasta and cool it, then add all prepped ingredients except dressing to lunch containers. You can also try a big batch of this to bring to a bbq or potluck event!
You can easily turn this vegetarian by omitting the meat options or replacing with veg-friendly meats. The sky is really the limit when it comes to options to add to this – try broccoli florets, sunflower seeds, green onion…whatever you love!
