ROAST GARLIC & ROSEMARY CHICKEN

Whole roast chicken really gives you a reason to love that traditional Sunday dinner – this is the meal that keeps on giving.  Use the deliciously stuffed chicken to complete a meal of caramelized sweet potato mash (recipe coming soon!) with a side of veggies, and then save the remainder of the meat for sandwiches, and of course don’t forget to turn the last of it into chicken stock!

With this recipe we’re going back to the basics with something that you can personalize to flavours you like!  This time, we chose a classic mix of garlic, lemon, rosemary and thyme (Scarborough Fair, anyone?).  And who doesn’t love homemade gravy made easily with the drippings (see quick recipe for gravy in the notes section of the recipe card)?

CHICKEN CAESAR PASTA SALAD

I’m always on the look-out for quick, easy and healthy meals that will fill me up without a lot of effort.  When I came up with this idea of making a good-for-you pasta salad, adding superfood Spinach was a no brainer.

This pasta salad is great for meal prep as you can add the dressing in later (keep it in a smaller container to keep everything from getting soggy).  On the weekend before a long week ahead, boil a big pot of pasta and cool it, then add all prepped ingredients except dressing to lunch containers.  You can also try a big batch of this to bring to a bbq or potluck event!

You can easily turn this vegetarian by omitting the meat options or replacing with veg-friendly meats.  The sky is really the limit when it comes to options to add to this – try broccoli florets, sunflower seeds, green onion…whatever you love!

THE BEST, EASIEST SLOW COOKER RIBS

When I say the best – I’m not making grand claims here, this recipe simply is THE BEST ribs recipe you will ever come across.  I say this because I have experimented with different methods of making ribs and this combination of slow cooking the meat in the sauce for a few hours and then transferring the tender rack(s) of ribs to the barbecue just makes the most delectable result with barely any effort.

Realistically, you could just slow cook the ribs and then broil for a few minutes in the oven as well until the edges get nicely caramelized and a bit burnt.  Either way you choose, it’s the slow cooker that does the bulk of the work and you never have to worry that the meat won’t be fall off the bone.

Please don’t skip any of the steps as much as you can – particularly the seasoning of the meat before placing it in the slow cooker is key to getting the maximum amount of flavour and tenderness that you can.  Check out the recipe after the jump!

GRILLED CHICKEN FAJITAS

One of my favourite meals growing up was my mom’s chicken fajitas.  I could easily eat a bunch of the over-stuffed tortillas before I could get enough.

This recipe is easy to cook either on a bbq or a pan in your kitchen.  This time around we chose the former option, and even stuck the tortillas on the grill on a low heat before eating.

CLASSIC HOMEMADE LASAGNA

Okay guys – this right here is my most treasured recipe, my holy grail recipe…my homemade lasagna.  Lasagna is something I have made for many years (some might call it my signature dish), and it really comes down to a simple formula that is easy to customize.  If you’re vegetarian, for instance, you could easily omit the meat in this recipe and replace with something thick like mushrooms in the sauce.

When I first started making this recipe (back when I was 14), I always used cottage cheese rather than ricotta.  This is acceptable, if it’s all you have or by personal preference, but I have never heard anybody turn down delicious and creamy ricotta cheese – I highly recommend you get the good stuff.
