CHICKEN CAESAR PASTA SALAD

I’m always on the look-out for quick, easy and healthy meals that will fill me up without a lot of effort.  When I came up with this idea of making a good-for-you pasta salad, adding superfood Spinach was a no brainer.

This pasta salad is great for meal prep as you can add the dressing in later (keep it in a smaller container to keep everything from getting soggy).  On the weekend before a long week ahead, boil a big pot of pasta and cool it, then add all prepped ingredients except dressing to lunch containers.  You can also try a big batch of this to bring to a bbq or potluck event!

You can easily turn this vegetarian by omitting the meat options or replacing with veg-friendly meats.  The sky is really the limit when it comes to options to add to this – try broccoli florets, sunflower seeds, green onion…whatever you love!

CHICKEN CAESAR PASTA SALAD

Servings: 4 servings

Ingredients

  • 2 chicken breasts, flattened
  • 1 tablespoon olive oil
  • 1 tablespoon onion powder
  • 1/2 tablespoon garlic powder
  • 1/2 teaspoon oregano
  • 1/2 teaspoon parsley
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • Juice of half a small lemon
  • 2-4 slices bacon, chopped
  • 1 tablespoon butter
  • 1 cup of pasta (penne, farfalle, etc)
  • 1-2 cups spinach, packed
  • 1/2 field cucumber or 1/3 English cucumber, sliced and quartered
  • 1 cup grated carrot
  • 1/2 cup croutons
  • Caesar dressing
  • Grated Parmesan cheese, optional

Instructions

  1. Combine olive oil, onion powder, garlic powder, oregano, parsley, salt, pepper, and lemon juice in a ziploc bag or container. Add flattened chicken breasts and marinade in the fridge for at least 30 minutes, ideally at least 1 hour.
  2. After chosen marinade time, add chopped bacon to a sauce pan and cook until done, remove to a small bowl. While cooking bacon, boil 1 cup of noodles according to package directions until al dente.
  3. Drain most of bacon fat, leaving about 1 tablespoon in the pan as well as any bits of bacon leftover.
  4. Once pasta is to desired doneness, drain and rinse with cold water. Leave to the side to fully drain any remaining liquid.
  5. Put pan with bacon fat back on the stove on medium heat. Add butter.
  6. Once butter has melted and is evenly coating the pan, add marinaded chicken breasts and cook 3-4 minutes per side, or until no longer pink, basting with the butter from the pan while cooking to keep moist.
  7. Slice chicken into bite-sized pieces.
  8. Assemble pasta salad in a bowl or single bowls with even amounts of pasta, spinach, cucumber, carrot, croutons, chicken and bacon. Add desired amount of caesar dressing, add parmesan cheese (if desired), toss and serve.

Notes

Add about 1/2 cup of noodles (and some more veggies!) for each person or single meal you are cooking for.

Experiment with other vegetables and toppings like broccoli, seeds, cheeses and more!
