GRILLED CHICKEN FAJITAS

One of my favourite meals growing up was my mom’s chicken fajitas.  I could easily eat a bunch of the over-stuffed tortillas before I could get enough.

This recipe is easy to cook either on a bbq or a pan in your kitchen.  This time around we chose the former option, and even stuck the tortillas on the grill on a low heat before eating.

Don’t forget to give different toppings a try!  Rice, beans, pico de gallo (recipe here) avocado/guacamole, salsa, radishes, etc all work well with fajitas.  Check out the recipe after the jump!

GRILLED CHICKEN FAJITAS

Ingredients

  • 1/2 cup taquiero sauce or salsa
  • 1 tablespoon chili powder
  • 1 tablespoon cumin
  • 1 teaspoon oregano
  • 1 tablespoon onion powder
  • 1 tablespoon garlic powder
  • Pinch of salt
  • 2 cracks of pepper
  • 1/2 cup olive oil
  • 2 chicken breasts, halved
  • 1 red pepper, halved
  • 1 Spanish onion, sliced into rings

Instructions

  1. Mix all dry ingredients with olive oil in a bowl, then separate in two putting one half of the marinade in a ziploc bag or dish with halved chicken breasts, and the reserving the other half on the side to baste the chicken once grilling/cooking.
  2. Marinade the chicken for at least 1 hour, though 2 hours or more is ideal.
  3. Once marinaded, cook the chicken on the bbq until no longer pink on the inside, and nicely grilled on the outside. If cooking in a pan on the stovetop, ensure the chicken cooks all the way through.
  4. While cooking the chicken, set up a pan on the stovetop with sliced red pepper and onion (with 2 tablespoons of marinade added), or put red pepper halves and onion slices on the bbq basting with marinade.
  5. If desired, grill tortillas quickly on the bbq for about a minute on low heat, or warm up tortillas in the oven.
  6. Serve chicken, red pepper, and onion cut up into strips with tortillas with tortillas and any toppings of choice.

Notes

Experiment with toppings! Try rice, beans, pico de gallo/salsa, guacamole/avocado, sour cream, avocado crema, cheese, greens - sky is the limit!

These were made with flour tortillas, but corn tortillas will be amazing with this chicken recipe as well!
